Few things are as universally loved as rocky road. You can be as creative as you want when making it, and Easter rocky road is doing the rounds on TikTok right now for this very reason - you can add any form of Easter-based treats to it. Ingredients - Serves 16
200g dark chocolate
200g milk chocolate chips
100g unsalted butter
100g golden syrup
100g mini marshmallows (add more if you want it extra chewy)
100g scotch fingers or oreo biscuits, chopped
25 mini eggs
25 mini creme eggs
3 full-sized creme eggs
Method
- Melt your dark chocolate and milk chocolate chips in a heat-proof bowl with the butter and golden syrup in the microwave.
- Add in your mini eggs, mini creme eggs, biscuits and marshmallows - or anything else you fancy. Mix together well.
- Pour it all into a cake tin, add more melted chocolate on top, and add some halved creme eggs.
- Place it into the fridge overnight and cut into slices in the morning.
